Spring has brought even more fresh items to the Market this week!  Be sure to stop by our new vendors as you visit all of your favorite booths.  Also, check out this weeks fresh market recipe, Kale and Mushroom Lasagna, yum!

DON’T FORGET, our weekly Rancho Santa Fe Certified Farmers Market is open from 9:30 AM to 2:00 PM in the Del Rayo Village Shopping Center.  Look for your favorites and new vendors each week and check out the new tenants in the center while you are there.

Rancho Santa Fe Fresh Market Recipe

Kale and Mushroom Lasagna
RSFFM mushroom and kale lasagna

  • 6 sun-dried tomatoes
  • 12 lasagna noodles
  • 6 tablespoons extra virgin oilve oil (Thyme of Essence)
  • 4 garlic cloves minced (Valdivia Farms)
  • 1 large onion (Valdivia Farms)
  • 10 oz Cremini mushrooms (Edible Alchemy)
  • 2 pounds fresh firm tofu
  • 2 tablespoons mirin
  • 4 fresh basil leaves finely chopped (Sage or Kawano Farms)
  • 2 tablespoons finely chopped fresh parsley (Sage Mountain or Kawano Farms)
  • 2 bunches finely chopped fresh kale (African Sisters)
  • Himalayan salt and black pepper
  • 4 cups Heirloom Tomato Sauce (Pasta Designs)
  • 1 1/2 cups grated mozzerella (Franks Cheese)


Preheat Oven to 475. Soak the the sun-dried tomatoes in a small bowl with just enough hot water to cover. When tomatoes are soft, drain, chop and set aside. Cook the lasagna noodles until just soft (adding a few drops of olive oil so they do not stick, drain and set aside as well.)


In a large pot over medium heat, saute garlic and onions in oil just until soft, then add the mushrooms and saute another three minutes.  Drain and squeeze the tofu to remove excess water and crumble into the pot.  Add mirin, sun-dried tomatoes, basil and parsley and saute 5 minutes.  Add in the kale then cover and cook for 3 minutes.  Season to taste with salt and pepper and remove from heat.


Spread 1/2 cup tomato sauce over bottom of a 9 x 12 lasagna dish.  Place a single layer of noodles over sauce and cover with half of the kale mixture.  Cover with 1 1/2 cups of tomato sauce.  Sprinkle with 1/2 cup of mozzarella cheese.  Cover with another layer of noodles and remaining kale mixture.  A 1 1/2 cups of tomato sauce, 1/2 cup of mozzarella cheese, and final layer of noodles, 1/2 cup sauce and remaining cheese.


Cover tightly with foil and bake for 35 minutes.  Remove foil and bake another 12 minutes more.  Remove from the oven and let cool for 10 minutes before serving.  Serves 8

Looking for a mature mate that will fit right into family life? Look no further than Steeler, Pet-of-the-Week at Helen Woodward Animal Center! Steeler, a Tabby blend, is quite a little catch at just under 10lbs, and 7 years old. He is a bit of an ‘old soul’, quiet, and content just to be with people who care for him. He also has a fun kitten streak- so get ready to play! Don’t let this ‘man of steel’ fool you- he’s a real softy.

Steeler is waiting to meet you at Helen Woodward Animal Center. He has been altered and is up-to-date on all of his vaccinations.  His adoption fee is $86, and, as with all pets adopted from Helen Woodward Animal Center, he is micro-chipped for identification.  As an added bonus, he also comes with two free passes to Sea World!

Helen Woodward Animal Center is located at 6461 El Apajo Road in Rancho Santa Fe. Kennels are open daily Monday through Thursday from 12pm to 6pm; Fridays from noon to 6pm
