The RSF Fresh Market Recipe of the Week is…
Citrus Roasted Sweet Potatoes with Rosemary

RSFFM Citrus Honey Sweet Potatoes with Rosemary (2)What You Will Need and Where to Find it:

  • 1/4 cup Citrus Honey (SD Honey Company)
  • 1 tbsp fresh squeezed organic lemon or orange juice (Atkins Farms)
  • 1 tbsp unsalted organic butter, melted (Franks Cheeses/Thyme of Essence)
  • 5 large sweet potatoes, peeled and diced in about 1 inch cubes (Coast, Sage or Valdivia Farms)
  • Pinch of salt
  • Fresh rosemary sprigs (Coast or Sage Mountain Farms)

 

To Prepare:

Preheat the oven to 350°F.  Whisk the Citrus Honey, citrus juice and butter in a medium bowl. Toss with the diced sweet potatoes and sprinkle lightly with salt.  Pour the potatoes evenly into a roasting pan.

Roast for 45 minutes to 1 hour until the sweet potatoes are fork-tender. Serve with a light garnish of fresh rosemary. Buon Appetito!

Like her literary name sake, Juliet is a lovely, fun-loving little lady with a charming personality. She believes that all the world is a stage, and plays accordingly. She’s destined for a love that lasts the ages. Come meet her today!

Juliet is waiting to meet you at Helen Woodward Animal Center. She has been altered and is up-to-date on all of her vaccinations.  Her adoption fee is $119, and, as with all pets adopted from Helen Woodward Animal Center, she is micro chipped for identification.  As an added bonus, he also comes with two free passes to Sea World!

Helen Woodward Animal Center is located at 6461 El Apajo Road in Rancho Santa Fe. Kennels are open daily Monday through Thursday from 12pm to 6pm; Fridays from noon to 7pm; Saturdays 10am to 6pm; and Sunday 11am to 6pm (last application accepted 15 minutes before closing).”
