Rancho Santa Fe Fresh Market Recipe
Green Beans And Almonds
- 3 pounds green beans, trimmed (Valdivia Farms)
- 1/2 cup sliced almonds (Hopins Almonds)
- 3 tablespoons unsalted butter (Francks Cheeses)
- 5 tablespoons extra-virgin olive oil (Thyme of Essence)
- 2 large onions, sliced thin (Sage Mountain Farms)
- 2 tablespoons chopped fresh thyme leaves (Sage Mountain Farms)
- Himalayan Salt (Salt Farm)
- California S&P Blend (Salt Farm)
Fill a skillet with some water, adding enough to be just shy of the rim of the pan by about 1 inch. Place over high heat and bring up to boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp. Drain the beans and then run them under some cold water to stop them from cooking. Reserve the beans while you start the onions.
Return the skillet you cooked the beans in to the stove over medium heat. Add the almonds stirring every now and then until golden, about 3 to 5 minutes. Remove the almonds from the skillet and reserve. Return the skillet to the heat and add the butter and olive oil and heat until the butter has melted. Add the onions, season with salt and pepper, and cook stirring frequently until the onions caramelize 20 to 25 minutes. Add the thyme, and cook for another 5 minutes. Add the cooked cooled green beans and almonds, and stir well to combine. Season with California S & P Blend, to taste. YUM!

“Walnut” Performs Incredible Feats!
We just can’t hide how nuts we are for Walnut, but why would we try? She’s a gorgeous 4-year old Labrador Retriever blend girl with incredible athletic abilities. Around here she’s known for stellar stunts during play time, lightning fast fetching, and quick command-learning. She’s looking for a family who loves play time as much as she does, and doesn’t shy away from ear scratches or kisses. Are you game?
Walnut is waiting to meet you at Helen Woodward Animal Center. She has been altered and is up-to-date on all of her vaccinations. Her adoption fee is $284, and, as with all pets adopted from Helen Woodward Animal Center, she is micro-chipped for identification. As an added bonus, she also comes with two free passes to Sea World!
Helen Woodward Animal Center is located at 6461 El Apajo Road in Rancho Santa Fe. Kennels are open daily Monday through Thursday from 12pm to 6pm; Fridays from noon to 6pm
