  • 1/2 cup dry sherry
  • 2 cups root vegetables (parsnips, carrots, turnips, celery root)(Valdivia, Sage Mt. or Good Taste Farms)
  • 1 cup cremini or stemmed shiitake mushrooms, thinly sliced (Edible Alchemy)
  • 1/2 cup wild rice
  • 1/2 teaspoon fresh thyme (Sage Mt. Farm)
  • 1/2 teaspoon fresh rosemary (Sage Mt. Farm)
  • 1 teaspoon fresh oregano (Sage Mt. Farm)
  • 1 teaspoon fennel seeds, ground
  • 1 teaspoon black truffle seed salt (Be Runa)
  • 6 cups vegetable stock
  • 3 pounds fresh tomatoes, finely diced (Valdivia)
  • 2 teaspoons sea salt
  • 1/2 teaspoon ground pepper
  • 2 Tablespoons balsamic vinegar (Thyme of Essence)
  • 2 fresh baguettes (Oh La Vache)

To Prepare:

In a large soup pot, cook the onions, garlic, and sherry over medium high heat until the liquid evaporates.  Add the root vegetables, mushrooms, wild rice, thyme, rosemary, oregano, ground fennel, and black truffle seed salt  to the pot and toss with the onions.  Add the vegetable stock, bring to a boil, then reduce heat, cover and simmer for 30 minutes.

Add the tomatoes and their juice and cook uncovered for for another 20 to 30 minutes.  Add more stock if the soup becomes too thick.  Add the salt, pepper and the balsamic vinegar and serve with fresh sliced baguettes.

Buon Appetito!

A Classic Pair, Meet “Lucy” and “Linus”!

Helen Woodward Animal Center introduces Lucy and Linue looking for forever homes

Meet Helen Woodward Animal Center’s Pets-of-the-Week, Lucy and Linus! These two playful, curious young kitties just want to be ‘part of the gang’. Lucy, 7lbs., and Linus, 10 lbs. are 8-month old siblings who seem to find adventure around every corner. Lucy is more outgoing and has a glamorous white spot on her chest, while brother Linus is a bit more the reserved lap-cat type. They do not need to go to the same home, but kittens do well in pairs!

Lucy and Linus are waiting to meet you at Helen Woodward Animal Center. They have been altered and are up-to-date on all of their vaccinations.  Their adoption fees are $119 each, and, as with all pets adopted from Helen Woodward Animal Center, they are micro chipped for identification.  As an added bonus, they also come with two free passes to Sea World!

Helen Woodward Animal Center is located at 6461 El Apajo Road in Rancho Santa Fe. Kennels are open daily Monday through Thursday from 12pm to 6pm; Fridays from noon to 7pm; Saturdays 10am to 6pm; and Sunday 11am to 6pm (last application accepted 15 minutes before closing).”
