The RSF Fresh Market Recipe of the Week is…
Pomegranate and Roasted Butternut Squash Salad with Fig Balsamic Dressing

RSFFM pomegranate butternut apple saladSalad:

  • RSFFM Pomegranetes1 butternut squash, peeled, seeded and cubed (Sage Mountain)
  • 2 tablespoons EVOO (Terroir by the Sea or Thyme of Essence)
  • 1 teaspoon ground pink Himalayan salt
  • 8 cups mixed baby greens (Lath House Gardens)
  • 1 cup micro greens (Lath House Gardens)
  • 1 fresh sweet apple, like Honeycrisp or Pink Lady, cored and chopped (Smit Farms)
  • 5 ounces goat cheese (Franks Cheeses)
  • 1/4 cup walnuts, toasted and chopped (Smit Farms)
  • 1/4 cup pomegranate seeds (Smit or Atkins Farms)
Dressing:
  • 1/3 cup fig balsamic (Thyme of Essence)
  • 1/4 teaspoon pink salt
  • 1/8 teaspoon black ground pepper
  • 2/3 cup EVOO (Terroir by the Sea or Thyme of Essence)
Preheat oven to 400 F.  Cover a baking sheet with foil.  In a medium bowl, toss the squash with 2 tablespoons EVOO and salt, then arrange in a single layer on the baking sheet.  Bake for 25 minutes until lightly browned and remove from the oven.

 

While the squash is cooking, prepare the dressing by combining the first three ingredients in a blender.  Pulse to combine the ingredients then turn blender on to lowest setting and slowly drizzle in the oil until emulsified.  (Extra dressing can be stored in the refrigerator in a container with lid.  Shake before using)

 

In a salad bowl, toss together the mixed greens, warm squash, apple, and dressing.  Top with the micro greens, walnuts, goat cheese and pomegranate seeds just before serving.
