The RSF Fresh Market Recipe of the Week is…
Winter Herbed Mushroom and Potato Tartlets

RSFFM Mushroom and Potato TartletsFilling

  • 1 small rutabaga (Sage Mountain)
  • 4 small purple or Yukon gold potatoes (Sage or Valdivia)
  • 6 oz chanterelle or shitake mushrooms
  • 3 tablespoons minced fresh parsley (Sage Mountain)
  • 1 tablespoon minced fresh dill (Sage Mountian)
  • 3 or 4 fresh sage leaves, minced (Sage Mountain)
  • leaves from one sprig of fresh rosemary (Sage Mountain)
  • leaves from 3 fresh thyme sprigs (Sage Mountain)
  • Handful of fresh basil leaves (Sage Mountain)
  • 3 tablespoons fresh olive oil (Thyme of Essence)
  • 3 tablespoons fresh lemon juice (Atkins)
  • Sea salt and fresh ground pepper to taste
  • 2 large garlic cloves, minced (Validiva)
  • 2 oz feta cheese (sheep or goats milk) (Franks Cheeses)
For the crust:


  • 2 ready made pie crusts (Ruffled Apron Piecrusts)
  • 4 oiled tart pans

To Prepare:

Preheat the oven to 375, wrap rutabaga in foil and prick the potatoes with a fork.  Place them all on baking sheet and cook the potatoes for 30 to 40 minutes until tender with a fork.  Remove the potatoes from oven when soft and let the rutabaga continue to cook another hour until tender all the way through.


While those are baking, lightly rinse the mushrooms, removing stems from Shitake and slicing larger mushrooms.  Place them in a medium size bowl.  Set aside 2 tablespoons of parsley for later and then place all of the remaining herbs in the bowl along with 2 tablespoons of olive oil, the lemon juice, and 1/4 teaspoon sea salt, 1/8 teaspoon black pepper.  Mix all until well coated.


Take the crusts out of the larger pie pans and combine together on a cutting board into one large ball.  Divide into four small balls.  Flatten each and place in the oiled tart pans.  Prick with a fork.


Then peel the cooled rutabaga and potatoes, and thinly slice them.  Layer the potatoes and rutabaga slices in each crust lightly brushing each layer with olive oil and sprinkling with the remaining parsley and salt and pepper and cheese.  Top with the mushroom mixture.  Bake at 375 for 15 minutes.

Helen Woodward Animal Center is located at 6461 El Apajo Road in Rancho Santa Fe. Kennels are open daily Monday through Thursday from 12pm to 6pm; Fridays from noon to 7pm; Saturdays 10am to 6pm; and Sunday 11am to 6pm (last application accepted 15 minutes before closing).”
