Rancho Santa Fe Fresh Market Recipe

Farmers Market Roasted Vegetable Dip

RSFFM roasted vegetable salsaIngredients:

  • greens-in-baskets-veggies-rsffm1 medium zucchini cubed (Valdivia Produce)
  • 2 heirloom tomatoes, chopped (Valdivia Produce)
  • 1 red bell pepper, chopped (Kawano Farms)
  • 1 medium onion sliced (Kawano Farms)
  • 1/2 medium yellow squash (African Sisters Farm)
  • 1 clove garlic, peeled and chopped (Valdivia or Kawano Farms)
  • 1/8 cup Enzo Meyer Lemon Olive Oil (Smit Farm)
  • 1/2 teaspoon Garlic Cayenne Seed Salt (Be Runa)
  • Himalayan Salt & black pepper to taste (Thyme of Essence)
  • 1 French Baguette (Oh La Vache Bakery)
  • Rainbow carrots and celery sticks (African Sisters Farm)
To Prepare:
Lightly oil a baking pan and roast the vegetables at 400 degrees for for 25 minutes or until vegetables are browned on one side.  Place the vegetables and remaining ingredients in Vitamix blender on lowest setting for approximately 1 minute until the mixture is smooth but not over processed (small chunks left.)


This dip can be served warm or refrigerate for two hours and serve cold with fresh baguette slices, rainbow carrots and fresh celery sticks.

This seven-year old Beagle blend is about the bounciest boy we’ve seen this year and like any great hound, the quickest way to his heart is through his tummy. His photos manage to capture his playful eyes- and his great love affair with cookies! After sitting, following and eventually leaping to snag his cookie he was, at long-last, united with his love. Just like that- he’s got love in is heart and his tummy- he’s paw-sitively filled with love!

Scupples is waiting to meet you at Helen Woodward Animal Center. He has been altered and is up-to-date on all of his vaccinations.  His adoption fee is $284, and, as with all pets adopted from Helen Woodward Animal Center, he is micro chipped for identification.  As an added bonus, he also comes with two free passes to Sea World!

Helen Woodward Animal Center is located at 6461 El Apajo Road in Rancho Santa Fe. Kennels are open daily Monday through Thursday from 12pm to 6pm; Fridays from noon to 6pm
