For Dinner: Wild Mushroom Soup with Black Truffle, Sherry &Thymemushroom-soup-sherry-thyme-cropped

What you will need and where to find it:

  •  2 Tbs. unsalted butter (Thyme of Essence)
  •  2 Tbs. olive oil (Thyme of Essence)
  •  1 medium onion, cut into medium dice (to yield about 1-1/2 cups) (Valdivia)
  •  4 cloves garlic, minced (Valdivia)
  •  1 mixed medley of fresh wild mushrooms, rinsed, and thinly sliced (Edible Alchemy)
  •  2 Tbs. plus 1 tsp. fresh thyme leaves (Sage Mtn)
  •  Himalayan Pink Salt
  •  Fresh Ground Pepper
  •  Black Truffle Seed Salt (Be Luna)
  •  4 cups homemade or low-salt chicken or vegetable broth
  •  1/4 cup half-and-half
  •  3 Tbs. dry sherry
  •  1 Tbs. soy sauce
Serves six. Yields about 5-1/2 cups.

To Prepare Dinner:

Melt the butter and olive oil in a 5-qt. or larger stockpot over medium-high heat. Add the onion and mushrooms and cook until they begin to brown (resist the urge to stir too often), about 4-5 minutes. Stir in the garlic and cook for 1 minute. Add 2 Tbs. of the thyme, and 1/2 tsp. each salt and pepper; cook 2 to 4 minutes.


Add the broth, scraping up any browned bits in the pot with a wooden spoon. Bring to a boil over high heat then reduce the heat to maintain a simmer and cook 15-20 minutes. Remove from the heat and let cool slightly.


Transfer about half of the soup to a stand blender and process until smooth. Return the mixture to the pot and stir in the half-and-half, sherry, and soy sauce. Add more salt and pepper to taste, if needed, and reheat. Garnish each serving with a small pinch of the remaining 1 tsp. thyme and the Black Truffle Seed Salt.

Helen Woodward Animal Center has an ADORABLE Forever Friend for You to Love this Week!

Jethro-3_opt (2)Meet Jethro, Pet-of-the-Week at Helen Woodward Animal Center! We’re getting out the streamers and tuning up our singing “meows”, because March 8th is this 11lb, (almost) 13-year old Tabby’s birthday! He’s hoping for a day of sharing play-time with friends and snoozing in sunshine. His birthday wish is to find his own forever family to shower with loving nuzzles. Now that would be something to celebrate!


Jethro is waiting to meet you at Helen Woodward Animal Center. He has been neutered and is up-to-date on all of his vaccinations.  His adoption fee is $106 and, as with all pets adopted from Helen Woodward Animal Center, he is micro chipped for identification.  As an added bonus, Jethro also comes with two free passes to Sea World!

Helen Woodward Animal Center is located at 6461 El Apajo Road in Rancho Santa Fe. Kennels are open daily Monday through Thursday from 12pm to 6pm; Fridays from noon to 7pm; Saturdays 10am to 6pm; and Sunday 11am to 6pm (last application accepted 15 minutes before closing).”
