This Week’s RSF Fresh Market Recipe is. . .

Meyer Lemon and Basil Snap Peas

Just in time for spring, snap peas, basil and Meyer lemon from the Rancho Santa Fe Farmers Market – quick to prepare and speaking wholly of spring, perhaps this is the best kind of recipe for this season, when the new, vibrant flavors call for simple preparations rather than long hours spent over the stove or in the oven.  Serves 4

What You Will Need and Where to Find It:

  • 1 pound snap peas, trimmed (Kawano Farms or Sage Mountain)
  • 1 tablespoon Meyer lemon juice (Atkins)
  • 1 teaspoon Meyer lemon zest (Atkins)
  • 3 tablespoons extra virgin olive oil (Smit Orchards)
  • 1 teaspoon minced shallot (Valdivia Farms)
  • 1 tablespoon chopped basil leaves (Sage Mountain)
  • Salt and freshly ground pepper, to taste

Quick Preparation Makes for More Time to Enjoy the Spring Weather!

Fill a large bowl with water and ice. Set aside. Bring a large pot of water to a boil. Add snap peas and cook until just tender yet still crisp, about 2 minutes. Using a slotted spoon, transfer snap peas to ice water.  Whisk all other ingredients together in large bowl. Drain snap peas and toss with the lemon basil dressing.

Bon Apetit!
