The Italian Coast is perhaps one of the most beautiful places to visit in the summertime.  Since we all can’t travel to Italy together, we are continuing to bring Italy to the Rancho Santa Fe Farmers Market!  This week, browse through the hand crafted jewelry created by Couture by the Sea and pick up all of the freshest ingredients to make our Fresh Italian Recipe, Insalata Caprese. Delicioso!

DON’T FORGET, our weekly Rancho Santa Fe Certified Farmers Market is open from 9:00 AM to 1:30 PM in the Del Rayo Village Shopping Center.  Look for your favorites and new vendors each week and check out the new tenants in the center while you are there.

The RSF Fresh Market Recipe of the Week is…

Insalata Caprese

Continuing in our celebration of Italy’s best regional recipes, this week I chose the Caprese Salad.  The origins of this salad are from the isle of Capri, just off the Amalfi Coast in southern Italy.  The traditional recipe uses just six ingredients so the quality of the ingredients are the key to achieving the perfect taste and texture.


Begin with local vine-ripened heirloom tomatoes, I prefer the large beef steak type of tomato, however this is also good with pomodorini or smaller heirlooms.  Be sure to use real buffalo mozzarella,the light sponginess and unique flavor of the buffalo mozzarella will be apparent.  Look for the buffalo mozzarella sold in its own liquid and store it this way to keep it fresh and light.


The fresher the basil leaf and brighter green in color, the cleaner the taste will be and of course, the quality of the olive oil is of the utmost importance as it will be where all the flavors blend together.


Be sure you are using an extra virgin organic olive oil with a fruity flavor.  Do not use table salt for this recipe, but rather a true coarsely ground sea salt sparingly and fresh ground black pepper is key.  Presentation is also important so choose a beautiful platter and lovingly arrange this dish.



  • 8 large ripe, local organic heirloom tomatoes, sliced (Valdivia Farms)
  • 1 lb. fresh buffalo mozzarella cheese, thinly sliced (Pasta Designs)
  • 1/2 cup fresh basil leaves(Sage Mountain or Basil Plant from Atkins)
  • 1/4 cup fruity extra-virgin olive oil (Thyme of Essence)
  • 1/2 tsp. coarsely ground sea salt
  • 1/2 tsp. freshly ground pepper


On a beautiful platter, alternate slices of tomato and mozzarella. Garnish generously with basil leaves, tucking some underneath the tomatoes. Drizzle the olive oil over all, and then sprinkle with the salt and pepper. Serve immediately. Serves 4 to 6.
Variations: If you do not have fresh Basil leaves, substitute a small dollop of Basil Tops Original Pesto Sauce.  You may also drizzle with a Balsamic Reduction.

Sweet “Squeaks” Seeks Place in the Sun

Helen Woodward Animal Center introduces Squeaks looking for a forever home

DSC_0944-2-9Meet Helen Woodward Animal Center’s Pet-of-the-Week, Squeaks! This 9lb, 3-year old Chihuahua/Terrier blend is actually quiet as a mouse, and sweet as pie. She hardly makes a peep when meeting new friends, preferring to greet everyone with a wagging tail. She has a calm personality and that charming Chihuahua bounce in her step. She came to us from a rescue group in Northern California and hopes to find her place in the sun in sunny San Diego.

Squeaks is waiting to meet you at Helen Woodward Animal Center. She has been spayed and is up-to-date on all of her vaccinations. Her adoption fee is $269, and, as with all pets adopted from Helen Woodward Animal Center, she is micro chipped for identification.  As an added bonus, Squeaks also comes with two free passes to Sea World!

Helen Woodward Animal Center is located at 6461 El Apajo Road in Rancho Santa Fe. Kennels are open daily Monday through Thursday from 12pm to 6pm; Fridays from noon to 7pm; Saturdays 10am to 6pm; and Sunday 11am to 6pm (last application accepted 15 minutes before closing).”
