The RSF Fresh Market Recipe of the Week is…

Amalfi Green Beans with Almonds

With tender fresh beans now showing up at the market, I want to end our month long toast to Southern Italy with a quick and easy recipe found throughout the Amalfi Region this time of year.  This takes minutes to make and is a delicious side dish, or can serve as a nice meal alone for a light lunch.


  • 1 lb of Fresh Green Beans (Sage or Valdivia)
  • 1 Clove Garlic, grated (Valdivia)
  • 1 Tablespoon Olive Oil (Smit)
  • 1/2 cup Raw Almonds (Hopkins AG)
Rinse the green beans and trim by snapping off each of the ends.  In a sauce pan, heat the olive oil over medium flame and add the grated garlic, stirring for 30 seconds.  Add in the green beans and cook just until the color brightens – just a few minutes.  Then toss in whole (or sliced) raw almonds, mixing to coat the almonds and turn heat off.


Let sit for a couple of minutes then serve immediately while the beans are still crisp.  This is also delicious served as a chilled salad.  For another variation, add 1/2 teaspoon of grated lemon zest and you have Sorrento Beans.
